Lincoln Nebraska Bakery | S’more Cake | Gingersnap Spicy Pecan Cake

Celebrations are always a great reason for special event cakes from S’more Cake, a Lincoln Nebraska Bakery. Today I have completed my French Doll project and there is no better way to celebrate then to bake a cake.

It all began with a trip to JoAnn’s fabric store to look at quilt fabric. I discovered a bolt of cotton that had designs and words about Paris. My mind immediately went into action and I had the design idea for a doll. I visited with the assistant at the cutting table who helped me with suggestions for the hair and I was off and running. With my new sewing machine that I purchased at JoAnn’s, a portable Husqvarna Viking 100, I set up sewing area. Loving and enjoying the sun, I moved my sewing project around the house. I designed the pattern and through trial and error, made the body of my doll. As I watched the food channel, I used a seam ripper to separate the strands of thread for her hair, this took quite a while. She’s dressed in a black mini dress, beret, black boots and a wrap with the Paris looking fabric.

I began to plan this week’s specialty cake to celebrate my success. I chose a spicy pecan cake filled with caramelized buttercream with orange zest and added homemade gingersnap cookies. Gingersnaps that are made right are the best and were a favorite cookie with the neighborhood kids as my family grew up. The spicy pecan cake was then frosted with Orange Blossom buttercream and topped with orange peel curls and a gingersnap cookie. It tastes terrific and will be added to my selection of cookies and cream cakes.

After the cake is gone, I will still have the doll,”Ami” to remember my enjoyable day. Bonne journee!

As a Lincoln Nebraska Bakery, in addition to making cakes, I also enjoy making cookies. This year I was in Utah and had the pleasure of making valentine cookies with Allie, my grand daughter. She has become very good at mixing the dry ingredients while I mix up the wet ingredients in separate bowls. We make good working partners! She looked so cute in her chef’s hat and new apron from Spoons n’ Spice.

We chose a sugar cookie recipe that we received from my daughter, Alexa. It is a very good recipe that includes almond extract and takes very little time to make. The recipe calls for butter, sugar, flour and baking  powder. We rolled out the dough and cut out the cookies in the shape of hearts. With Allie’s help, we baked them in a 350 degree oven for about 10 minutes. We frosted the cookies with a powdered sugar and milk mixture. Each cookie was decorated with pink frosting, assorted sprinkles, and white pearl sugar beads. They looked very cute.

We thought it would be fun to have a valentine’s day portrait session with Allie in her little red and pink tutu, eating her cookies. She is very proud of herself and will enjoy looking at her pictures. They will remind her of the fun time we had together. Pictures have always been very important to me, something that I learned from my mom.

I have enjoyed my time in Utah with my family. I will treasure all of my experiences here, the great recipes and cake decorating that I have done with Niki and Allie. We enjoyed many fun meals and picnics at the park. The portfolio of my cakes for my website look great and I appreciate the memories we have created.

Special Event Cakes in Lincoln Nebraska|S’more Cake|Coconut Almond Cake with Allie

As a baker, I love making special event cakes in Lincoln Nebraska.  I really wanted to make a very special coconut almond cake with Allie. Grandpa Tom had made a little red stove for her last Christmas. She loves to cook and bake with her little pans. Allie saw me making a cake today and asked if she could help. I moved the little stove closer to the counter. I also gave her a chef’s hat. We had fun mixing the coconut with the brown sugar and measuring the flour for the mix. Our cake is a three layer coconut cake with a coconut filling. It was frosted with a cream cheese frosting and topped with toasted coconut and almonds. It is a very rich cake that will please your sweet tooth. Allie is a great cooking companion! The design of the spring fondant ruffle cake was a lot of fun to do and reminds me of the arrival of spring  and the anticipations of  new beginnings of the year. As a cake from Lincoln Nebraska Bakery, it would be ideal for the early spring bride. The cake is a traditional vanilla buttercream cake with raspberry buttercream filling, covered with a buttercream base, lemon fondant and ruffles made with sugar gum paste. It would be lovely as a bridal shower cake or baby shower cake as well.

Lincoln, Nebraska Wedding Cakes | S’more Cake | Nicolette and Alex’s Wedding

When Niki began her plans for her wedding day, it made me reminise how my mom had been there, helping with all of the details for my wedding. We ordered the flowers together, booked the reception hall, visited with the priest and sewed my dress. My mom wanted to make my wedding cake.  I wasn’t sure about this but agreed to let her do it.   It turned out very pretty.  She made a two tiered square wedding cake decorated with my favorite color yellow.  She had never made such a big cake before.  Leading up to the wedding day, she spent time learning how to make roses with buttercream frosting which she also shared with me.  I was very impressed with how it had turned out and it touched me with the love and care of detail she put into my wedding cake.

As Niki and I started planning her wedding, I asked if I could bake her wedding cake. She also was reluctant to have me do this, however, I was able to convince her to let me try. She wanted a three tiered cake with three different flavors of cake in each tier. She picked carrot, chocolate with raspberry filling, and a vanilla cake with with raspberry puree and a limeade cream cheese white chocolate filling. As I began Niki’s cake I learned a lot about what makes a cake moist and light. Sifting  and the proper measuring of flour has made a big difference in how I make my wedding cakes.

Niki and Alex were married at the top of a ski slope in Allie’s Cabin at Beaver Creek, Colorado. It was an adventure taking the cake up the mountain in separate tiers on a shuttle bus. I will always remember this experience and enjoy the wonderful photographs taken by Susan.
