Lincoln, Nebraska Wedding Cakes | S’more Cake | Nicolette and Alex’s Wedding

When Niki began her plans for her wedding day, it made me reminise how my mom had been there, helping with all of the details for my wedding. We ordered the flowers together, booked the reception hall, visited with the priest and sewed my dress. My mom wanted to make my wedding cake.  I wasn’t sure about this but agreed to let her do it.   It turned out very pretty.  She made a two tiered square wedding cake decorated with my favorite color yellow.  She had never made such a big cake before.  Leading up to the wedding day, she spent time learning how to make roses with buttercream frosting which she also shared with me.  I was very impressed with how it had turned out and it touched me with the love and care of detail she put into my wedding cake.

As Niki and I started planning her wedding, I asked if I could bake her wedding cake. She also was reluctant to have me do this, however, I was able to convince her to let me try. She wanted a three tiered cake with three different flavors of cake in each tier. She picked carrot, chocolate with raspberry filling, and a vanilla cake with with raspberry puree and a limeade cream cheese white chocolate filling. As I began Niki’s cake I learned a lot about what makes a cake moist and light. Sifting  and the proper measuring of flour has made a big difference in how I make my wedding cakes.

Niki and Alex were married at the top of a ski slope in Allie’s Cabin at Beaver Creek, Colorado. It was an adventure taking the cake up the mountain in separate tiers on a shuttle bus. I will always remember this experience and enjoy the wonderful photographs taken by Susan.

Lincoln Nebraska Wedding Cakes | S’more Cake | Zach and Shanon

My son Zach, got married last year in the month of July and the reception was at the Knolls Country Club. He was the last one of my children to settle in “marital bliss”, so we were all very exited for this event. Of course, I planned to make the cake. It was a three tiered, 2 layer classic white cake, with each layer covered with a raspberry puree flavored with lemon, then filled with a limeade, cream cheese and white chocolate. It was covered with a Mousseline Buttercream, white chocolate and cream cheese frosting flavored with Grand Marnier. The flowers that Shanon picked for her wedding were red roses, so I decorated the cake with a cascade of red roses down one side.

Zach is my only son and he made a point to remind me of this years ago when he was 6. While we walked to school one morning, he told me, looking at me very intently, “If I left, you wouldn’t have any little boy.” I agreed but wondered what had prompted this remark. Years later, he shared how he had been mad at me one day, packed his favorite GI Joes and hid behind a tree located up the street. He had peeked around the tree, back at the house waiting for me to come out looking for him. He finally came home.

I wish I had known, because I would have shown him that he was missed and that I loved him very much. It’s a funny story now, however, there’s an ache in my heart that I hadn’t assured him at the time. Anyway, I told him in front of all his family and friends at his wedding reception, that he always has a “home” in my heart as my only little boy.

♥♥My younger sister, Cece became engaged to Dan at the end of May, 2012, so when they asked me to make their wedding cake, I was pleased. He LOVES chocolate cake, so he wanted the entire cake made with chocolate. We also decided that it needed to be 4 tiered as the entire town of Red Oak would be invited to this reception, with anticipated guests at 250. Then my sister decided on fondant and I was very excited about planning a four tiered cake with all the possibilities of decorating with this icing. She is an artist, so it was very important that this cake be as beautiful as possible. After many taste testing of chocolate products, looking for the best and planning the best accenting flavor, we decided on a very rich chocolate cake recipe, with raspberry base and a dark chocolate filling with lemon flavored fondant. She picked out black and white ribbon resembling the invitation that was also planned in black and white.

Lincoln Nebraska Bakery|S’more Cake|Lemon Layered Cake

When life throws you lemons, make a lemon cake!!!! When my daughter, Niki, invited me to North Lake City, Utah for the photography of my web site, S’more Cake and told me that lemon cake was her favorite cake, I knew that would be my first signature cake. And what a cake this is! This cake is a four layer, lemon flavored cake with white chocolate mixed into the batter. It is frosted with a lemon buttercream with lemon zest and white chocolate. The filling is a lemon curd and lemon buttercream. When I was making the cake, the room became filled with the aroma of lemon and it was wonderful. My grand daughter Allie was running around, asking for “s’more cake, please”. It seems that she also enjoys the flavor of this sweetened fruit. But she had to wait until the photos had been taken.

We all watched as Niki prepared the platform, lighting and presentation of this cake. I loved the white wood floor that she suggested for the base and we used the new cake riser that I had just purchased from William Sonoma as the cake stand. It was a lot of fun and I love the way this cake looks!
