Lincoln Nebraska Bakery |S’more Cake |Valentine Cookies with Allie

As a Lincoln Nebraska Bakery, in addition to making cakes, I also enjoy making cookies. This year I was in Utah and had the pleasure of making valentine cookies with Allie, my grand daughter. She has become very good at mixing the dry ingredients while I mix up the wet ingredients in separate bowls. We make good working partners! She looked so cute in her chef’s hat and new apron from Spoons n’ Spice.

We chose a sugar cookie recipe that we received from my daughter, Alexa. It is a very good recipe that includes almond extract and takes very little time to make. The recipe calls for butter, sugar, flour and baking  powder. We rolled out the dough and cut out the cookies in the shape of hearts. With Allie’s help, we baked them in a 350 degree oven for about 10 minutes. We frosted the cookies with a powdered sugar and milk mixture. Each cookie was decorated with pink frosting, assorted sprinkles, and white pearl sugar beads. They looked very cute.

We thought it would be fun to have a valentine’s day portrait session with Allie in her little red and pink tutu, eating her cookies. She is very proud of herself and will enjoy looking at her pictures. They will remind her of the fun time we had together. Pictures have always been very important to me, something that I learned from my mom.

I have enjoyed my time in Utah with my family. I will treasure all of my experiences here, the great recipes and cake decorating that I have done with Niki and Allie. We enjoyed many fun meals and picnics at the park. The portfolio of my cakes for my website look great and I appreciate the memories we have created.

Special Event Cakes in Lincoln Nebraska|S’more Cake|Coconut Almond Cake with Allie

As a baker, I love making special event cakes in Lincoln Nebraska.  I really wanted to make a very special coconut almond cake with Allie. Grandpa Tom had made a little red stove for her last Christmas. She loves to cook and bake with her little pans. Allie saw me making a cake today and asked if she could help. I moved the little stove closer to the counter. I also gave her a chef’s hat. We had fun mixing the coconut with the brown sugar and measuring the flour for the mix. Our cake is a three layer coconut cake with a coconut filling. It was frosted with a cream cheese frosting and topped with toasted coconut and almonds. It is a very rich cake that will please your sweet tooth. Allie is a great cooking companion! I can see us doing more cooking projects together in the future. Lincoln Nebraska Wedding Cakes|S’more Cake|Spring Fondant Ruffle Cakes

The design of the spring fondant ruffle cake was a lot of fun to do and reminds me of the arrival of spring  and the anticipations of  new beginnings of the year. As a cake from Lincoln Nebraska Bakery, it would be ideal for the early spring bride. The cake is a traditional vanilla buttercream cake with raspberry buttercream filling, covered with a buttercream base, lemon fondant and ruffles made with sugar gum paste. It would be lovely as a bridal shower cake or baby shower cake as well.

Lincoln Nebraska Wedding Cakes|S’more Cakes|You have SNOW, we have ICE CASTLES!

My trip to Salt Lake City has been filled to overflowing with many wonderful activities that I will treasure for a long time. Along with the fun I am having with the little grand daughters, I have had a great time with Niki as we have fine tuned our web sites together, taste tested cakes and desserts, at several great places, by far our favorites being Plates and Palates and Les Madeline. We have located all of the area Starbucks, Whole Foods, Barnes & Nobles, and even had a spa morning at Beyond Spa.

My favorite event has been the Ice Castles at Midway with characters from Frozen greeting us. What an event!! It was breath taking! Niki got a lot of photos for us and Allie spent a lot of her time picking up ice chunks. She did get to see Olaf, which was very exciting. We drank hot chocolate, apple cider and ate donuts as we watched the flame throwers warming us up with their acts at the end of our time there.

Lincoln, Nebraska Wedding Cakes|S’more Cake|Alexa and Josh’s Wedding

Alexa had been planning her wedding since she was young, so she had definite ideas what she wanted. One thing she was very clear about was she wanted peonies to be the prominent flower in her bouquet and so I added them to her cake as well. There were pink peonies everywhere! We had planned on 4 tiers of vanilla wedding cake with limeade cream cheese filling on top of raspberry puree and frosted with buttercream white chocolate. I added pillars between two of the tiers and she picked out a topper of a silver M and I added some stemmed crystals. It was an beautiful hors d’oeuvres reception with a chocolate fountain and was held at Wilderness Ridge in Lincoln, Nebraska.
