Lincoln Nebraska Birthday Cakes | S’more Cake | Zach’s Birthday Cake

I surprised Zach, my son, with a special birthday cake from S’more Cake, a Lincoln Nebraska Birthday Cakes Bakery.  So I created this fun cake for him. Today is his birthday, Tom and I had a lot of fun solving the logistics for this cake. He has a taste for the beers from Germany, so this was an important central theme for this cake.

I started with a moist yellow cake, a recipe that has always been a taste pleaser with my family. Each of the three layers were moistened with berry syrup to add extra flavor and richness. Then between each layer was filled with a coconut pecan and milk chocolate frosting. I crumb coated the cake with the coconut pecan/milk chocolate frosting, added a layer of parchment paper cut to fit the top of the layers. Then I placed a cake pan, up right as the tub for the ice and beer bottles. The cake and pan were then coated with a rich fudge and peanut butter frosting to hold the fondant in place.

I cut brown marbled fondant in 2 inch by 7 1/2 inch strips, leaving a small opening between each strip to resemble the slates of a wooden bucket. The two added black horizontal strips finished the look of this wooden bucket. I added a finished edge at the top with the black fondant to complete the look of this bucket. Two bottles of the German beer and ice cubes added to the realistic look of this cake/beer bucket.

The look of surprise and pleasure on Zach’s face made all the effort worth it. Happy Birthday to a wonderful son!

S’more Cake, Lincoln Nebraska Wedding Cakes Bakery, I designed a delicious chocolate cake that would be a perfect centerpiece for a holiday wedding or special event. This is my favorite chocolate cake because I love espresso and cream with my chocolate cake, or rather IN my chocolate cake. This chocolate cake recipe was the perfect choice for my mini cupcake show case and it fit into the central theme of the Wedding Crash at Wilderness Ridge. It was designed for brides planning their upcoming weddings during the holiday seasons. The cake design was done in delicate white edible sugar lace, sugar burgundy roses and leaves. It consisted of two tiers with three layers of chocolate cake, filled with my best truffle ganache and a filling of raspberry swiss meringue. It was crumb coated with chocolate fudge frosting and covered in raspberry flavored fondant.

I also want to share a couple of helpful insights that I learned this week. First, always use a oven thermometer. I found out that my oven was 23 degrees cooler than it was supposed to be. No wonder my cakes had to stay in the oven longer than the recipe recommended. Secondly, while watching the food net work program, I found out that the height of the cake and the height of the filling of that cake should be a ratio of one to one or one to two, depending on the density of the filling. Interesting. We really need to enjoy our frostings in that case!

Lincoln Nebraska Easter Bunny Cakes | S’more Cake | Allie

I traveled to Salt Lake City this last weekend to design the perfect Lincoln Nebraska Easter Bunny Cakes with my grand daughter Allie. We had been very busy all weekend with planned egg hunts, picnics in the park and taking long walks. We enjoyed the beautiful weather while viewing the wonderful mountains. When it came time to start our cake together, Allie was excited, as well as very impatient to begin.

After we worked out the design on paper, we put on our aprons, set up our ingredients, coated the pans and started our work. We made a double batch of cake in a 9 by 12 inch pan for the base, for arms and legs and two 7 inch circular pans for the back. While the carrot cake was baking, we made the head and tail with Rice Krispy bars. The bunny was assembled and covered with my favorite cream cheese frosting includes sour cream, butter and white chocolate. Allie had fun covering the cake with fresh coconut. The face, toes and ears were made with white, pink and black homemade fondant.

We enjoyed our Easter Bunny cake with our delicious Sunday meal.
